Highland Lake Inn’s Armer Ritter, Pain Perdu, or French Toast.


We have had many requests for our recipe of Armer Ritter, Pain Perdu, or better known here as French Toast. Since Pecco Beaufaÿs hails a trained chef from the Sacher Hotel, Vienna, Austria, he doesn’t really go by any recipe; he eyeballs the ingredients to find the correct proportions; however, the mixture is virtually idiot-proof!
First, begin with wonderful soft and tasty bread such as Raisin Pecan, Challah, or airy French bread. Create a cream mixture of eggs, heavy cream, cinnamon-sugar, a splash of vanilla and a jigger of orange juice. Pour over the bread and let it absorb into the bread. Then, fry the bread slices up in a pan with unsalted butter until golden colored.  Serve immediately besprinkled with confectionary sugar and doused with Maple syrup. 
For four servings: 4 eggs, one cup of cream, and a dash of the other ingredients.

Eggs Florentine from the Rosewood Country Inn


3 tablespoons butter
3 tablespoons flour
3 cups milk
1/4 teaspoon salt
1/4 teaspoon pepper
dash nutmeg
1 tablespoon minced onion
1 cup grated cheddar cheese
1 pkg baby spinach, wilted in microwave
8 English muffins, split in half and lightly toasted
16 slices Canadian bacon
8 hard boiled eggs, sliced
Parmesan cheese
bread crumbs

In a medium saucepan melt butter. Add flour and stir for one minute. Add milk and cook until thickened. Add salt, pepper nutmeg, onion and Cheddar cheese.

Place split muffins on a baking sheet. Place a slice of Canadian bacon, some spinach and half of a sliced hard boiled egg. Pour some of the sauce over top. Sprinkle with Parmesan cheese and some bread crumbs. Dot with a small piece of butter and broil until lightly browned.

Sunapee-Ragged-Kearsarge-Greenway Hike

Three towns, one ski area, two summits, a 19' glacial erratic boulder, many excellent views, and an impressive variety of forest types will be among your rewards for joining this hike on the SRKG's Trail 9 on Ragged Mountain. The hike is rated difficult because of its 6.1 mile length and 1400' of ascent. We'll meet in Andover at the Proctor Academy Field House parking lot at 8 AM and carpool to the trailhead on New Canada Road in Wilmot. Estimated time on the trail is 6 hours. Landscape Painting at the Fells

Enjoy the beauty of the gardens and architecture of The Fells in a plein air workshop taught by Aline Ordman, award winning signature member of the Pastel Society of America. Aline, a teacher of over 20 years, concentrates on understanding color through exploration of values and shapes created by the play of light in nature. Students benefit from Aline's hands-on style and one-on-one and group critiques. Work is in either pastels or oils with demonstrations in each provided daily. Musterfield Farm, Farm Days

The museum's largest event of the year, a two-day celebration of all things agricultural, historical, and farm-related. This event features special exhibits and demonstrations positioned over the farm’s large fields and in its historic buildings.

See haying and threshing, hand hewing of timbers, stonewall building and stone splitting, rope making, blacksmithing, and other farm-related skills. Craft demonstrations include spinning, weaving on antique looms, flax processing and spinning, felting, natural dyeing, lace making, and much more.

Children can make and enjoy homemade ice cream, using ice cut by hand during the Farm’s annual Ice Harvest event, held at nearby Kezar Lake each January.

Displays of the Farm’s many artifacts will be featured in the Ezekiel Little, Hildredth, and Hardy-Pillsbury Barns, a reminder of farm work and life from days past. Oxen and smaller animals will be on display. Antique trucks, cars and tractors are on parade at 3 p.m. each day, and work-saving antique small engines are exhibited. An assortment of food, jellies, jams, and vegetables are available at the Farm Stand, and wonderful food is served throughout the day. And don’t miss Muster Field's famous Roast Beef Supper on Saturday from 5-7 p.m.! Tickets for the supper are required: $10 for adults and $5 for children, available by reservation (927-4047), or at the Farm Days Information Booth.

Farm Days hours are 10 a.m. to 4 p.m., rain or shine. Admission is free for members, and for all children 6 and under; $5 for non-members.

History of Bradford and Warner Explored in New Book
Local historians team up to tell story through vintage photographs




The newest addition to Arcadia Publishing’s popular Images of America series is Bradford and Warner from local authors Laurie Buchar and Rebecca Courser. Featuring vintage photographs from the collections of the Bradford and Warner Historical Societies, Bradford and Warner affords a glimpse into the mutual past of these two towns.

In the mid-1700s, Bradford and Warner were tiny settlements of log dwellings that emerged from the wilderness in tandem. A gunshot fired in Bradford would resound in the Mink Hills and call neighbors to help in times of need. This blend of independence and reliance built these quintessential communities into what they are today.

Lake Massesecum lies near the border of these two towns, and its runoff helps form the Warner River, which served as a vital industrial and recreational link between the two communities. At 2,937 feet, Mount Kearsarge reigns supreme above Bradford and Warner, offering unobstructed views for many miles.

BAKED EGGS With COTTAGE DILL BREAD & HERBS from The Candlelite Inn


Baked Eggs with Cottage Dill bread and herbs is one of most requested breakfast. What is so unique about this recipe is the bread. By changing the herb bread it will give you a whole new taste. Also, use 2 different kinds of cheese; or add broccoli or asparagus.

Cottage Dill Bread
¼ Monterey cheese or Muenster cheese
¼ Swiss cheese
5 large eggs
1 cup milk
Salt & pepper to taste

Preheat oven to 350 degrees. Butter 4 au gratin dishes. Place a slice of bread in each dish. Divide the cheeses amongst each dish. In a bowl, beat the eggs, milk and seasonings until frothy and pour over the bread and cheeses. Bake until the eggs are puffy and lightly brown about 15-20 minutes. Yields: 4 servings.

Breakfast Tarts from Sunapee View Bed and Breakfast


Ingredients:          
4 Tablespoons melted butter
5 cups cornflakes
1 cup pecans
6 Tablespoons maple syrup

Pulse the cornflakes and pecans in a food processor
Drizzle in the melted butter and pulse a few times
Add the maple syrup and pulse a few more times

Press into (6) 4 inch tart pans with removable bottoms
Bake at 350 for 10 minutes
Remove from pans when fully cooled
Filling:        Fill with a heaping spoonful of Greek yogurt
Topping:     Top with a heaping spoonful of mixed berries or other fruit
Sprinkle with a little confectioner’s sugar
