Eggs Florentine from the Rosewood Country Inn


3 tablespoons butter
3 tablespoons flour
3 cups milk
1/4 teaspoon salt
1/4 teaspoon pepper
dash nutmeg
1 tablespoon minced onion
1 cup grated cheddar cheese
1 pkg baby spinach, wilted in microwave
8 English muffins, split in half and lightly toasted
16 slices Canadian bacon
8 hard boiled eggs, sliced
Parmesan cheese
bread crumbs

In a medium saucepan melt butter. Add flour and stir for one minute. Add milk and cook until thickened. Add salt, pepper nutmeg, onion and Cheddar cheese.

Place split muffins on a baking sheet. Place a slice of Canadian bacon, some spinach and half of a sliced hard boiled egg. Pour some of the sauce over top. Sprinkle with Parmesan cheese and some bread crumbs. Dot with a small piece of butter and broil until lightly browned.
